Beef calves from a dairy herd.
Calves of a beef breed from the dairy herd are an important source of raw materials for the Irish beef industry. Dairy herds breed their best animals to dairy breeds in order to provide replacements, but around 30% of the national dairy herd is mated to a beef sire in order to increase the value of the offspring. Angus and Hereford, which are noted for their ease of calving, are the most popular beef breeds for use in the dairy herd.

The Antient And Present State of The County And City Of Waterford by Charles Smith (1715-1762) was published in 1746 and is among the first significant histories of the region. Charles Smith aimed to produce a series covering every county in Ireland with fellow historian Walter Harris but the society funding the ambitious project folded. The work coveres the history of Waterford from prehistoric times until the mid 18th century.

Richard Caulfield's The Council Book of the Corporation of Cork from 1609 to 1643 and from 1690 to 1800 are proceedings of the muncipal authorities of Cork as they took place. Caulfield's work is an attempt to provide a faithful record of history rather than romantic version.
