Beef Stew with Dumplings

There were nine of us and my mother is a fabulous cook. There was always a piping hot dinner along with a dessert ready for us after we walked the mile from our bus stop.
Beef Stew
Ingredients
2 lbs shin beef
3 onions
6 carrots
2 potatoes
Dried herbs
Salt and pepper
Method
- Brown the beef and onions.
- Add all vegetables and herbs.
- Add one pint of beef stock.
- Simmer for 1.5 hours.
Dumplings
Ingredients
8 oz flour
4oz butter
Dried herbs
Salt and pepper
1/2 cup of v cold water
Method
- Add chopped butter to flour and mix into a fine breadcrumb mix.
- Add herbs and salt pepper.
- Add water and lightly knead.
- Divide into golf ball size balls and add to simmering stew fir 20 mins. They will fluff up into light dumplings.
- Serve with creamed potatoes.
Good food well cooked is the mainstay of a healthy happy family!
