Recipe: Tomato & Shallot Salad
This is yet another example where adding excessive ingredients is unnecessary for a tasty meal. The sweetness of the plum tomatoes works well with the peppery taste of the rocket.

Tomato & Shallot Salad

Ingredients
6 large plum tomatoes
Large handful fresh rocket
3 shallots-very thinly sliced
Cracked black pepper
5 tablespoons olive oil
Method
Cut the tomatoes into wedges and mix in with the rocket leaves.
Scatter the thinly sliced shallots on the top and season with the addition of some cracked black pepper.
Drizzle with the olive oil and allow to rest for a few minutes before serving to allow the olive oil to take on the favours of the tomatoes.
This is lovely to pile on top of a piece of toast to serve as a chunky bruschetta.
